Barbeque Chicken & Cheese Sandwich

Rotisserie chicken, bbq sauce, mozzarella & cheddar cheeses with red onions & cilantro on toasted sourdough bread.

    Step1

    Preheat oven broiler. Cover a baking sheet with aluminum foil. Chop cooked rotisserie chicken into desired size pieces and add to a large mixing bowl. Thinly slice red onion and add it to the bowl also.

    Step2

    Chop cilantro and add it to the mixing bowl with the other ingredients stirring until combined.

    Step3

    Shred mozzarella cheese and add it to the bowl, mixing again until combined.

    Step4

    Add barbeque sauce of your choice to the chicken mixture stirring until combined. Heat the chicken and cheese mixture in the microwave for one minute or until mixture is hot and cheese has started melting.

    Step5

    Places slices of bread on the prepared baking sheet and toast until golden.

    Step6

    Add sliced cheddar cheese to bread and place the bread back into the broiler until cheese is melted.

    Step7

    Add a generous amount of barbeque chicken to one of the slices of bread. Cut in half and serve.
